Ingredients

- 1 medium cucumber

Instructions
- In a large mixing bowl, combine the pickled beets, sliced cucumber, crumbled feta cheese, and fresh dill.
- In a separate bowl, whisk together the lemon juice, olive oil, honey, dijon mustard, salt, and pepper until smooth.
- Pour the dressing over the salad ingredients and mix gently until everything is evenly coated.
- Cover with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld before serving.
