- 1/2 cup milk
- 1/4 cup sour cream

Instructions
- Place the baby potatoes in a large pot and cover them with water.
- Add a pinch of salt to the water and bring it to a boil over high heat.
- Once boiling, reduce the heat to medium and cook the potatoes for about 15-20 minutes, or until they are fork-tender.
- While the potatoes are cooking, prepare the steak.
- Cut the sirloin steak into bite-sized pieces, ensuring they are roughly uniform in size.
- Season the steak pieces with salt, pepper, and paprika, tossing them to coat evenly.
- Heat the olive oil in a large skillet over medium-high heat.
- Once the oil is hot, add the steak bites to the skillet in a single layer.
- Cook the steak bites for about 4-5 minutes, turning them occasionally to ensure they brown evenly on all sides.
- Once the steak is cooked to your desired level of doneness, remove the steak from the skillet and set it aside.
- In the same skillet, reduce the heat to medium and add 2 tablespoons of butter.
- Once the butter has melted, add the minced garlic and cook for about 30 seconds, or until fragrant.
- Return the steak bites to the skillet and toss them in the garlic butter for an additional 2 minutes, ensuring they are well coated.
- Remove the skillet from the heat and set the steak bites aside.
- Check the baby potatoes for tenderness by poking them with a fork.
- If they are soft, drain the water from the pot and return the potatoes to the pot.
- Use a potato masher or the back of a spoon to gently smash the potatoes, leaving them slightly chunky.
- Add the milk, sour cream, and 2 tablespoons of butter to the potatoes.
- Mash everything together until the potatoes are creamy and smooth, adjusting the consistency with more milk if necessary.
- Stir in the shredded cheddar cheese until it is melted and fully incorporated.
- Season the mashed potatoes with salt and pepper to taste.
- Transfer the mashed potatoes to a serving dish.
- Top the mashed potatoes with the garlic butter steak bites.
- Sprinkle chopped fresh parsley over the steak bites and mashed potatoes for a fresh, vibrant finish.
