Ingredients

  • 4 cloves garlic, minced
  • 1 pound sirloin steak, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • 2 pounds baby potatoes
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Place the baby potatoes in a large pot and cover them with water.
  2. Add a pinch of salt to the water and bring it to a boil over high heat.
  3. Once boiling, reduce the heat to medium and cook the potatoes for about 15-20 minutes, or until they are fork-tender.
  4. While the potatoes are cooking, prepare the steak.
  5. Cut the sirloin steak into bite-sized pieces, ensuring they are roughly uniform in size.
  6. Season the steak pieces with salt, pepper, and paprika, tossing them to coat evenly.
  7. Heat the olive oil in a large skillet over medium-high heat.
  8. Once the oil is hot, add the steak bites to the skillet in a single layer.
  9. Cook the steak bites for about 4-5 minutes, turning them occasionally to ensure they brown evenly on all sides.
  10. Once the steak is cooked to your desired level of doneness, remove the steak from the skillet and set it aside.
  11. In the same skillet, reduce the heat to medium and add 2 tablespoons of butter.
  12. Once the butter has melted, add the minced garlic and cook for about 30 seconds, or until fragrant.
  13. Return the steak bites to the skillet and toss them in the garlic butter for an additional 2 minutes, ensuring they are well coated.
  14. Remove the skillet from the heat and set the steak bites aside.
  15. Check the baby potatoes for tenderness by poking them with a fork.
  16. If they are soft, drain the water from the pot and return the potatoes to the pot.
  17. Use a potato masher or the back of a spoon to gently smash the potatoes, leaving them slightly chunky.
  18. Add the milk, sour cream, and 2 tablespoons of butter to the potatoes.
  19. Mash everything together until the potatoes are creamy and smooth, adjusting the consistency with more milk if necessary.
  20. Stir in the shredded cheddar cheese until it is melted and fully incorporated.
  21. Season the mashed potatoes with salt and pepper to taste.
  22. Transfer the mashed potatoes to a serving dish.
  23. Top the mashed potatoes with the garlic butter steak bites.
  24. Sprinkle chopped fresh parsley over the steak bites and mashed potatoes for a fresh, vibrant finish.
