  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional: ¼ teaspoon red pepper flakes (for heat)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Wash and scrub the sweet potatoes thoroughly. Cut them into wedges, about 1 inch thick.
  3. In a small bowl, combine the olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using. Mix well to create a flavorful oil blend.
  4. In a large mixing bowl, toss the sweet potato wedges with the garlic oil mixture until they are evenly coated.
  5. Sprinkle half of the grated Parmesan cheese over the wedges and mix again to ensure even coverage.
  6. Spread the sweet potato wedges in a single layer on the prepared baking sheet.
  7. Place the baking sheet in the preheated oven and bake for 25-30 minutes, turning the wedges halfway through.
  8. Remove from the oven, and while the wedges are still hot, sprinkle the remaining Parmesan cheese on top and allow it to melt slightly.
