- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
- Optional: ¼ teaspoon red pepper flakes (for heat)
Instructions
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
- Wash and scrub the sweet potatoes thoroughly. Cut them into wedges, about 1 inch thick.
- In a small bowl, combine the olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using. Mix well to create a flavorful oil blend.
- In a large mixing bowl, toss the sweet potato wedges with the garlic oil mixture until they are evenly coated.
- Sprinkle half of the grated Parmesan cheese over the wedges and mix again to ensure even coverage.
- Spread the sweet potato wedges in a single layer on the prepared baking sheet.
- Place the baking sheet in the preheated oven and bake for 25-30 minutes, turning the wedges halfway through.
- Remove from the oven, and while the wedges are still hot, sprinkle the remaining Parmesan cheese on top and allow it to melt slightly.
- Transfer the wedges to a serving platter and sprinkle fresh parsley over the top. Serve immediately.
