Delicious grilled chicken bites marinated in a savory mix and served with a creamy garlic sauce.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley (for garnish)
- 1/3 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1 teaspoon lemon juice or vinegar
- Pinch of salt
Instructions
- Cut the chicken into bite-sized pieces. In a bowl, mix olive oil, soy sauce, honey, garlic, paprika, salt, and pepper. Add the chicken and toss to coat. Marinate for at least 30 minutes in the fridge.
- In a small bowl, stir together mayonnaise, Dijon mustard, garlic, lemon juice (or vinegar), and a pinch of salt until smooth. Chill until ready to serve.
- Thread marinated chicken pieces onto skewers, leaving a little space between each piece (optional).
- Heat grill or grill pan over medium-high heat. Cook chicken for 4–5 minutes per side until golden and cooked through (internal temp 165°F/75°C).
- Drizzle or dip into the creamy garlic sauce. Garnish with chopped parsley and enjoy!
Notes
- For extra flavor, marinate the chicken longer if possible.
- Feel free to add your favorite spices to the marinade.
