Description
A delicious and refreshing summer salad combining grilled chicken, ripe peaches, and feta cheese served on a bed of mixed greens.
Ingredients

- 2 boneless, skinless chicken breasts
- 2 ripe peaches, halved and pitted
- 4 cups mixed greens (arugula, spinach, etc.)
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat. Brush chicken breasts and peach halves with olive oil and season with salt and pepper.
- Grill chicken for about 6-7 minutes on each side until cooked through. Grill peaches for about 3-4 minutes until slightly charred.
- In a large bowl, combine mixed greens, grilled chicken (sliced), grilled peaches, and feta cheese.
- Drizzle with balsamic vinegar and toss gently before serving.
Notes
- For added flavor, marinate the chicken in olive oil and balsamic vinegar for 30 minutes before grilling.
- Feel free to substitute feta cheese with goat cheese if preferred.
