Grilled Lemon Herb Shrimp Skewers are a delightful and flavorful dish, perfect for a summer barbecue or a quick weeknight meal.

- ¼ cup olive oil
- 2 tbsp lemon juice
- Zest of 1 lemon
- 3 garlic cloves, minced
- 1 tsp honey (or maple syrup)
- 1 tsp Dijon mustard
- 1 tsp dried oregano
- ½ tsp dried thyme
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- 1 lb large shrimp, peeled and deveined
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 small red onion, cut into chunks
- 1 zucchini, sliced into half-moons
- Lemon wedges, for serving
- Fresh parsley, chopped, for garnish
Instructions
- Make the marinade: In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, honey, Dijon mustard, oregano, thyme, smoked paprika, salt, black pepper, and red pepper flakes.
- Marinate the shrimp: Place shrimp in a large bowl or zip-top bag. Pour in half of the marinade, tossing to coat. Cover and refrigerate for 15–30 minutes.
- Prepare the skewers: If using wooden skewers, soak them in water for at least 20 minutes to prevent burning. Thread shrimp, bell peppers, red onion, and zucchini onto skewers, alternating for color.
- Preheat the grill: Heat an outdoor grill or grill pan to medium-high heat and lightly grease the grates.
- Grill the skewers: Place the skewers on the grill and cook for 2–3 minutes per side, until the shrimp turn opaque and slightly charred. Brush with the remaining marinade as they cook for extra flavor.
- Serve: Remove from the grill, garnish with fresh parsley and lemon wedges, and enjoy!
Notes
- Do not marinate shrimp for longer than 30 minutes to prevent them from becoming mushy.
- Feel free to add other vegetables based on your preference.
- If using wooden skewers, ensure to soak them adequately to avoid burning on the grill.
