- 4 boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon sesame oil
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup water
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Pineapple slices, for serving
Instructions
- In a bowl, whisk together soy sauce, pineapple juice, brown sugar, garlic, ginger, and sesame oil to create a marinade. Add the chicken breasts, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, coconut milk, water, and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- To serve, place a generous scoop of coconut rice on each plate, top with grilled chicken, and garnish with fresh cilantro and pineapple slices.

- Feel free to add vegetables to the coconut rice for extra nutrients.
