A refreshing twist on the classic Caprese salad featuring sweet peaches for a unique flavor combination.

- 4 peaches, diced (or swap for nectarines)
- 3 roma tomatoes, diced
- 1/2 cup mozzarella balls
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar (or substitute with apple cider vinegar)
- 1/4 teaspoon salt and pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 1/3 cup prosciutto (optional)
- 2–3 tablespoons balsamic reduction
Instructions
- Prepare the Ingredients: Start by chopping the tomatoes and peaches or nectarines into equal, bite-sized pieces.
- Make the Dressing: In a small bowl or jar, combine olive oil, vinegar, and your choice of seasonings. Mix well and taste, adjusting with more salt and pepper if desired.
- Assemble the Salad: In a large serving bowl, combine the chopped tomatoes, peaches, mozzarella balls, and fresh basil. Pour the dressing over and mix well.
- Add Finishing Touches: Gently lay slices of prosciutto across the top and finish with a drizzle of balsamic glaze.
Notes
- For a vegan version, omit the prosciutto and use a vegan mozzarella alternative.
- This salad is best served fresh; however, it can be stored in the refrigerator for up to 2 hours before serving.
