- 1 lb boneless, skinless chicken breasts
- 1/4 cup honey
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup cooked white or brown rice
- 1/4 cup cilantro, chopped
- 1 tablespoon lime juice
- Salt to taste
- 2 ripe avocados, sliced
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a bowl, whisk together honey, lime juice, lime zest, minced garlic, salt, and pepper. Add the chicken breasts and marinate for at least 15 minutes.
- Heat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked through and no longer pink in the center. Remove from heat and let rest for a few minutes before slicing.
- In a bowl, combine the cooked rice, chopped cilantro, lime juice, and salt. Mix well to combine.
- In a separate bowl, toss the avocado slices with lime juice, salt, and pepper to prevent browning.
- On a plate, start with a layer of the cilantro lime rice, followed by slices of the grilled chicken, and then the avocado slices. Drizzle with any remaining honey-lime dressing.
