  • 2 tablespoons lime juice

  • 2 cloves garlic, minced

  • 1 cup cooked white or brown rice
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice
  • Salt to taste
  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together honey, lime juice, lime zest, minced garlic, salt, and pepper. Add the chicken breasts and marinate for at least 15 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked through and no longer pink in the center. Remove from heat and let rest for a few minutes before slicing.
