Irresistible Raspberry Cheesecake Bars

Description

Deliciously creamy raspberry cheesecake bars with a buttery graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup raspberries, fresh or frozen
  • 2 tbsp raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a medium bowl, mix the graham cracker crumbs and 1/4 cup of sugar. Add melted butter and stir until combined. Press the mixture firmly into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, beating after each addition. Mix in the vanilla extract.
  4. Pour the cream cheese mixture over the crust in the pan and spread evenly.
  5. Gently toss raspberries with raspberry jam and scatter over the top of the cream cheese mixture.
  6. Bake for 30 minutes or until the edges are set and the center is only slightly jiggly.
  7. Allow to cool completely at room temperature before refrigerating for at least 2 hours.
  8. Once chilled, cut into bars and serve.

Notes

  • For best results, use fresh raspberries if possible.
  • Ensure the cream cheese is at room temperature for easier mixing.
  • Store leftovers in the refrigerator for up to 3 days.
