  • ½ teaspoon black pepper
  • 1 large egg, beaten
  • 1 cup buttermilk (or whole milk as an alternative)
  • 2 cups vegetable oil (for frying)
  • ¼ cup honey
  • 23 jalapenos, finely chopped (seeds optional for less heat)
  • 1 tablespoon apple cider vinegar
  • Pinch of salt
  • 4 sandwich buns, toasted
  • Lettuce, shredded
  • Tomato slices
  • Pickles, optional
  • Optional: mayonnaise or aioli

Instructions

  1. In a bowl, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper.
  2. Dredge the chicken thighs in the buttermilk, ensuring they are coated evenly.
  3. Dip the chicken into the flour mixture, pressing gently to coat all sides.
  4. Heat vegetable oil in a large skillet or deep fryer over medium-high heat until it reaches about 350°F (175°C).
  5. Carefully lower the chicken into the hot oil and fry for 5-7 minutes on each side or until golden brown and cooked through. Remove from the oil and drain on a paper towel-lined plate.
  6. In a small saucepan, heat the honey over low heat. Add the chopped jalapenos and cook for 3-5 minutes.
  7. Stir in the apple cider vinegar and a pinch of salt, and simmer for another 1-2 minutes. Remove from heat.
  8. Lightly toast the sandwich buns until golden brown.
  9. On the bottom bun, add a layer of lettuce and a slice of tomato. Place the crispy fried chicken on top.
  10. Generously drizzle the jalapeno honey mixture over the chicken. Add pickles if desired.
  11. Place the top bun on the sandwich and serve immediately.
