Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a clean bowl, whip egg whites until soft peaks form, then gradually add granulated sugar until stiff peaks form.
  3. Sift together almond flour and powdered sugar; gently fold into the whipped egg whites until well combined.
  4. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
  5. Let piped macarons rest for 30-60 minutes until they form a dry skin.
  6. Bake for 15-20 minutes; allow to cool completely before removing from sheets.
  7. For the filling, beat softened butter until creamy, then gradually mix in powdered sugar and key lime juice until fluffy.
  8. Pair macaron shells and fill one half with the key lime filling before sandwiching them together.
