- 12 ounces of pasta (penne or rotini)
- 1 pound of kielbasa sausage, sliced into half-moons
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
- Add the pasta and cook according to package instructions until al dente (8-10 minutes). Stir occasionally to prevent sticking.
- Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.
- In a large skillet, heat olive oil over medium heat.
- Add sliced kielbasa and cook for 5-7 minutes until browned and slightly crispy.
- Add diced onion and cook for another 3-4 minutes until translucent.
- Stir in minced garlic, red bell pepper, and green bell pepper. Cook for an additional 5 minutes.
- Add halved cherry tomatoes, dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper. Cook for another 3-4 minutes until tomatoes start to break down.
- Reduce heat to low and pour in heavy cream. Stir to combine.
- Allow to simmer for about 5 minutes, stirring occasionally.
- Gradually add grated Parmesan cheese, stirring until melted and creamy. If too thick, add reserved pasta water to reach desired consistency.
- Add cooked pasta to the skillet and gently toss until well coated with the sauce.
- If dry, add more reserved pasta water until creamy texture is achieved.
- Taste and adjust seasoning with salt, pepper, or herbs if needed.
- Remove from heat and serve hot, garnished with freshly chopped parsley and extra Parmesan cheese if desired.
Notes
- Substitute any type of pasta based on preference.
- For a lighter version, use half-and-half instead of heavy cream.
- Add spinach or kale for extra nutrition.
