Ingredients

  • 1 3/4 cup confectioners’ sugar (200g)
  • 3 large egg whites (90g)
  • 1/4 cup granulated sugar (50g)
  • 2 tbsp freshly squeezed lemon juice (30ml)
  • 1/2 cup softened butter (115g)
  • Zest of 1 lemon
  • 1 cup powdered sugar (120g)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift together almond flour and confectioners’ sugar into a bowl.
  3. In a separate bowl, whip egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
  4. Gently fold the dry ingredients into the whipped egg whites until well combined.
  5. Pipe small circles onto the prepared sheets and let sit for 30 minutes to form a skin.
  6. Bake for 15-20 minutes until firm but not browned. Cool completely.
  7. For the filling, beat softened butter with powdered sugar and lemon zest until smooth. Pipe onto half of the macaron shells and sandwich them together.

Notes

  • Make sure not to overmix the batter to keep the macarons from becoming flat.
  • Room temperature egg whites work best for stability.
