Lemon Macarons are delicate French cookies made with almond flour and filled with a tangy lemon buttercream, perfect for any occasion.
Ingredients

- 1 cup almond flour (100g)
- 1 3/4 cup confectioners’ sugar (200g)
- 3 large egg whites (90g)
- 1/4 cup granulated sugar (50g)
- 2 tbsp freshly squeezed lemon juice (30ml)
- 1/2 cup softened butter (115g)
- Zest of 1 lemon
- 1 cup powdered sugar (120g)
Instructions
- Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
- Sift together almond flour and confectioners’ sugar into a bowl.
- In a separate bowl, whip egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
- Gently fold the dry ingredients into the whipped egg whites until well combined.
- Pipe small circles onto the prepared sheets and let sit for 30 minutes to form a skin.
- Bake for 15-20 minutes until firm but not browned. Cool completely.
- For the filling, beat softened butter with powdered sugar and lemon zest until smooth. Pipe onto half of the macaron shells and sandwich them together.
Notes
- Ensure the egg whites are at room temperature for better volume.
- Macarons can be stored in an airtight container for up to a week.
- Using a kitchen scale can help ensure accurate measurements.
