Ingredients

  • 1 cup dry lentils (green or brown)
  • 1 tbsp olive oil
  • 1 onion (diced)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 3 garlic cloves (minced)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • For the Mashed Potatoes:
  • 4 large potatoes (peeled and chopped)
  • ½ cup milk
  • 4 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery in olive oil until soft.
  2. Add garlic and cook for 1 minute.
  3. Stir in lentils, tomatoes, vegetable broth, thyme, and bay leaf.
  4. Bring to a boil, then simmer for 25-30 minutes until lentils are tender.
  5. Meanwhile, cook the potatoes in salted water until tender, then drain.
  6. Add milk, butter, salt, and pepper to the potatoes and mash until creamy.
  7. Serve the lentil stew over the mashed potatoes.

Notes

  • Feel free to add other vegetables to the stew based on your preference.
  • For a spicier version, add red pepper flakes or chili powder.
  • This dish can be stored in the refrigerator for up to 3 days.
