A comforting dish featuring hearty lentil stew served over creamy mashed potatoes.
Ingredients

- 1 cup dry lentils (green or brown)
- 1 tbsp olive oil
- 1 onion (diced)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 3 garlic cloves (minced)
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- For the Mashed Potatoes:
- 4 large potatoes (peeled and chopped)
- ½ cup milk
- 4 tbsp butter
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, carrots, and celery in olive oil until soft.
- Add garlic and cook for 1 minute.
- Stir in lentils, tomatoes, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then simmer for 25-30 minutes until lentils are tender.
- Meanwhile, cook the potatoes in salted water until tender, then drain.
- Add milk, butter, salt, and pepper to the potatoes and mash until creamy.
- Serve the lentil stew over the mashed potatoes.
Notes
- Feel free to add other vegetables to the stew based on your preference.
- For a spicier version, add red pepper flakes or chili powder.
- This dish can be stored in the refrigerator for up to 3 days.
