Description

Luxurious Raspberry Pistachio Macarons are delightful treats featuring smooth, delicate shells made from almond flour and pistachios, filled with a rich raspberry buttercream.

Ingredients

Scale
  • 1 cup powdered sugar
  • ¾ cup almond flour
  • 2 tablespoons finely ground pistachios
  • 2 large egg whites, at room temperature
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • A pinch of salt
  • A few drops of green food coloring (optional)
  • ½ cup fresh raspberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Sift the powdered sugar, almond flour, and ground pistachios into a large bowl.
  2. In a mixing bowl, beat the egg whites with a pinch of salt until foamy, then gradually add granulated sugar until stiff peaks form.
  3. Gently fold in the dry ingredients until the batter flows like lava.
  4. Transfer the batter to a piping bag and pipe small circles onto a baking sheet.
  5. Let the macarons rest at room temperature for 30-45 minutes.
  6. Preheat oven to 300°F (150°C) and bake for 14-16 minutes.
  7. In a saucepan, combine raspberries, sugar, and lemon juice, then strain after cooking.
  8. Beat softened butter, then mix in powdered sugar and vanilla to make buttercream.
  9. Fold in the cooled raspberry mixture to the buttercream.
  10. Assemble macarons by pairing shells, adding raspberry buttercream, and topping with another shell.
  11. Let the assembled macarons rest in the refrigerator for at least 24 hours before serving.

Notes

  • Ensure your mixing bowl is grease-free for whipping egg whites.
  • Allow the macarons to cool completely before removing them from the baking sheet.
  • For best results, let the filled macarons mature in the refrigerator.
