Instructions
- Sift the powdered sugar, almond flour, and ground pistachios into a large bowl.
- In a mixing bowl, beat the egg whites with a pinch of salt until foamy, then gradually add granulated sugar until stiff peaks form.
- Gently fold in the dry ingredients until the batter flows like lava.
- Transfer the batter to a piping bag and pipe small circles onto a baking sheet.
- Let the macarons rest at room temperature for 30-45 minutes.
- Preheat oven to 300°F (150°C) and bake for 14-16 minutes.
- In a saucepan, combine raspberries, sugar, and lemon juice, then strain after cooking.
- Beat softened butter, then mix in powdered sugar and vanilla to make buttercream.
- Fold in the cooled raspberry mixture to the buttercream.
- Assemble macarons by pairing shells, adding raspberry buttercream, and topping with another shell.
- Let the assembled macarons rest in the refrigerator for at least 24 hours before serving.
