Description

A delicious and impressive salmon dish cooked in a creamy sauce with sun-dried tomatoes and spices, perfect for a special occasion.


Ingredients

  • 34 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken stock, unsalted
  • 1/2 cup heavy cream
  • 1/3 cup chopped sundried tomatoes
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • Fresh basil

Instructions

  1. Add the seasonings to a small bowl – dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper. Combine thoroughly.
  2. Add half of the seasoning mix to the salmon filets. Rub it into both sides thoroughly.
  3. Add olive oil to a large skillet over medium-high heat. Once hot, add the seasoned salmon flesh side down first. Sear on each side for about 5 minutes. Remove from the pan and set aside.
  4. Add minced garlic and chopped sun dried tomatoes to the same skillet. Optional: Add a splash of the sun dried tomato oil. Turn the heat to low and sauté for 1-2 minutes.
  5. Add the chicken stock to deglaze the pan, scraping up any brown bits.
  6. Add heavy cream, fresh parmesan cheese, and remaining seasoning mix. Combine thoroughly.
  7. Raise heat to medium-low and simmer for 10-15 minutes until the sauce thickens. Adjust salt and pepper if needed.
  8. Place salmon back into skillet. Spoon sauce over the salmon. Cook for an additional 3-5 minutes, based on desired doneness.
  9. Serve and enjoy! Garnish with fresh basil.
