A delicious and impressive salmon dish cooked in a creamy sauce with sun-dried tomatoes and spices, perfect for a special occasion.

- 3–4 salmon fillets, skin removed
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 3/4 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup chicken stock, unsalted
- 1/2 cup heavy cream
- 1/3 cup chopped sundried tomatoes
- 5 garlic cloves, minced
- 1/2 cup freshly shredded parmesan cheese
- Fresh basil
Instructions
- Add the seasonings to a small bowl – dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper. Combine thoroughly.
- Add half of the seasoning mix to the salmon filets. Rub it into both sides thoroughly.
- Add olive oil to a large skillet over medium-high heat. Once hot, add the seasoned salmon flesh side down first. Sear on each side for about 5 minutes. Remove from the pan and set aside.
- Add minced garlic and chopped sun dried tomatoes to the same skillet. Optional: Add a splash of the sun dried tomato oil. Turn the heat to low and sauté for 1-2 minutes.
- Add the chicken stock to deglaze the pan, scraping up any brown bits.
- Add heavy cream, fresh parmesan cheese, and remaining seasoning mix. Combine thoroughly.
- Raise heat to medium-low and simmer for 10-15 minutes until the sauce thickens. Adjust salt and pepper if needed.
- Place salmon back into skillet. Spoon sauce over the salmon. Cook for an additional 3-5 minutes, based on desired doneness.
- Serve and enjoy! Garnish with fresh basil.
