  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon cumin powder
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • Pinch of garam masala

Instructions

  1. Dice onions and tomatoes, then sprinkle with a pinch of salt and let sit for 5 minutes to draw out moisture.
  2. Beat eggs vigorously with turmeric, chili powder, cumin powder, and salt until smooth and frothy, about 2 minutes.
  3. Pat the salted vegetables dry with paper towels and mix them into the beaten eggs along with ginger and green chilies.
  4. Heat oil in a non-stick pan over medium heat until it shimmers.
  5. Add the egg mixture, ensuring even distribution of vegetables, and let it set for 30-45 seconds without stirring.
  6. When the bottom is golden and set but the top is slightly creamy, gently fold one half over the other using a spatula.
  7. Slide onto a plate, sprinkle with fresh cilantro and garam masala, and serve hot.
