  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion

  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. In a mixing bowl, combine chicken, zucchini, cherry tomatoes, red onion, and garlic.
  4. Drizzle with olive oil and add seasonings; mix well.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Top with mozzarella and Parmesan cheese.
  7. Cover with foil; bake for 20 minutes.
  8. Remove foil; bake for an additional 10-15 minutes until cheese is golden brown and bubbly.
  9. Garnish with fresh parsley before serving.
