Ingredients

- 3 medium ripe tomatoes, cut into wedges
- 1 cucumber, peeled and sliced into half moons
- 1/2 red onion, thinly sliced
- 1 green bell pepper, sliced
- 1/2 cup Kalamata olives, pitted
- 3/4 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Sea salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Chop the tomatoes, cucumber, red onion, and bell pepper and place them in a large mixing bowl.
- Add the Kalamata olives to the bowl with the chopped vegetables.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
- Pour the dressing over the vegetables and gently toss until everything is evenly coated.
- Top the salad with crumbled feta cheese and serve immediately or chill slightly before serving.
Notes
- For added flavor, let the salad sit for about 10 minutes after tossing to allow the dressing to penetrate the vegetables.
