Ingredients

  • 90 g egg whites room temperature

  • ¼ tsp salt
  • ½ cup granulated sugar (for filling)
  • 2 tbsp water (for filling)
  • ¼ cup heavy cream (for filling)
  • ½ cup unsalted butter softened (for filling)
  • ½ tsp vanilla extract (for filling)
  • ⅛ tsp salt (for filling)

Instructions

  1. Sift almond flour, powdered sugar, cocoa powder, and espresso powder into a bowl. Set aside.
  2. Whip egg whites and salt until frothy, then gradually add sugar while mixing until stiff peaks form.
  3. Fold dry ingredients into meringue gently, deflating slightly until the batter flows like lava.
  4. Pipe circles onto a lined baking sheet using a piping bag.
  5. Tap the tray against the counter to remove air bubbles.
  6. Let the shells rest for 30–40 minutes until they form a slight skin.
  7. Bake at 300°F (150°C) for 12–15 minutes, until firm but not browned.
  8. Cool completely before filling.
  9. Heat sugar and water in a small saucepan until deep golden brown to make the filling.
  10. Carefully whisk in heavy cream (it will bubble aggressively).
  11. Stir in butter, vanilla, and salt until smooth.
  12. Let caramel cool completely before whipping into buttercream until fluffy.
  13. Pipe caramel buttercream onto half the shells and sandwich with the remaining shells.
  14. Refrigerate overnight for best texture and flavor.
