Description
A refreshing no-bake dessert that combines lemon pudding and graham crackers for a delightful treat.
Ingredients

- 1 box graham crackers (14.4 oz)
- 2 boxes instant lemon pudding (3.4 oz each)
- 3½ cups cold milk
- 1 tub Cool Whip (8 oz), thawed
- 1 can lemon frosting (16 oz)
Instructions
- Grease your 9×13-inch dish with nonstick cooking spray.
- Make a layer of graham crackers on the bottom of the dish.
- In a bowl, whisk together the pudding mixes and cold milk for about 2 minutes until smooth and thickened.
- Gently fold the Cool Whip into the pudding mixture.
- Spread half of the pudding mixture over the graham crackers.
- Add another layer of graham crackers.
- Spread the remaining pudding mixture on top.
- Cover with one final layer of graham crackers.
- Warm the lemon frosting in the microwave for about 30 seconds and stir.
- Spread the warm lemon frosting over the top of the dessert.
- Cover with plastic wrap and refrigerate for at least 12 hours, preferably overnight.
- Cut into squares and serve.
Notes
- Letting the cake rest overnight in the fridge enhances its flavor and texture.
- Feel free to use fresh lemon zest for added flavor.
- Great to serve with iced tea or fresh fruit on the side.
