No-Bake Lemon Éclair Cake: A Refreshing Dessert Delight!

A refreshing no-bake dessert that combines lemon pudding and graham crackers for a delightful treat.


Ingredients

  • 1 box graham crackers (14.4 oz)
  • 2 boxes instant lemon pudding (3.4 oz each)
  • 3½ cups cold milk
  • 1 tub Cool Whip (8 oz), thawed
  • 1 can lemon frosting (16 oz)

Instructions

  1. Grease your 9×13-inch dish with nonstick cooking spray.
  2. Make a layer of graham crackers on the bottom of the dish.
  3. In a bowl, whisk together the pudding mixes and cold milk for about 2 minutes until smooth and thickened.
  4. Gently fold the Cool Whip into the pudding mixture.
  5. Spread half of the pudding mixture over the graham crackers.
  6. Add another layer of graham crackers.
  7. Spread the remaining pudding mixture on top.
  8. Cover with one final layer of graham crackers.
  9. Warm the lemon frosting in the microwave for about 30 seconds and stir.
  10. Spread the warm lemon frosting over the top of the dessert.
  11. Cover with plastic wrap and refrigerate for at least 12 hours, preferably overnight.
  12. Cut into squares and serve.

  • Letting the cake rest overnight in the fridge enhances its flavor and texture.
  • Feel free to use fresh lemon zest for added flavor.
