A flavorful one-pan dish featuring Cajun chicken, sausage, and rice, perfect for a hearty meal.


Ingredients

  • 4 boneless, skinless chicken thighs, cut into bite-sized pieces
  • 12 oz andouille sausage, sliced
  • 1 1/2 cups long-grain white rice, rinsed
  • 3 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large, deep skillet or pan over medium-high heat. Add the chicken pieces and sliced sausage, cooking until the chicken is browned and the sausage is slightly crisp, about 5-7 minutes. Remove from the pan and set aside.
  2. In the same pan, add the diced onion and bell pepper. Cook for 3-4 minutes until softened, then add the minced garlic and cook for another minute until fragrant.
  3. Stir in the rinsed rice, Cajun seasoning, and smoked paprika, ensuring the rice is well coated with the spices.
  4. Pour in the chicken broth and bring to a simmer. Return the browned chicken and sausage to the pan. Cover and cook on low heat for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff the rice with a fork and garnish with fresh parsley if desired. Serve hot, with extra Cajun seasoning on the side if needed.

  • Adjust the level of Cajun seasoning to taste for more or less spice.
