Ingredients

  • 1 lb (450g) smoked sausage, sliced into 1/2-inch rounds
  • 1 tbsp olive oil
  • 1 cup uncooked long-grain white rice, rinsed
  • 2 1/4 cups chicken broth
  • 1/2 cup BBQ sauce (sweet and tangy style)
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp smoked paprika (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced sausage and brown on both sides (2–3 mins per side). Remove and set aside.
  3. In the same skillet, reduce heat to medium. Add rice and toast for 1–2 mins, stirring often.
  4. Stir in garlic powder, onion powder, smoked paprika, salt, and pepper.
  5. Add chicken broth, BBQ sauce, and soy sauce. Mix until fully combined.
  6. Return sausage to the pan and nestle into the rice.
  7. Bring to a light simmer, cover, reduce heat to low, and cook for 18–20 minutes until rice is tender and liquid absorbed.
  8. Remove from heat and let rest, covered, for 5 minutes.
  9. Fluff rice, garnish as desired, and serve hot.
