One-Pot Beef & Lobster Risotto

Description

A luxurious one-pot dish combining tender beef and sweet lobster with creamy risotto, perfect for a cozy dinner night.


Ingredients

  • 6 oz lobster tail meat, chopped (raw or pre-cooked)
  • 6 oz beef tenderloin or ribeye, cubed
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt & black pepper to taste
  • 1 clove garlic, minced
  • 1 cup arborio rice
  • ½ small onion, finely diced
  • 2 cloves garlic, minced
  • ½ cup dry white wine (optional)
  • 34 cups chicken or seafood broth, warmed
  • ½ cup parmesan cheese, grated
  • ¼ cup heavy cream (optional)
  • 1 tbsp butter
  • Fresh parsley & lemon zest for garnish

Instructions

  1. Heat the olive oil in your skillet or pot over medium-high heat. Season the beef cubes with salt and pepper. Sear them for 2–3 minutes on each side until browned. Remove from the pot and set aside.
  2. In the same pan, melt 1 tbsp butter. Add garlic and sauté your lobster meat for 2–3 minutes until just opaque and cooked through. If using pre-cooked lobster, simply warm it gently and set aside with the beef.
  3. Add a touch more oil or butter if needed. Sauté the finely diced onion until translucent. Add garlic and cook for another 30 seconds.
  4. Stir in the arborio rice and toast it for 1–2 minutes, until the grains look slightly translucent on the edges.
  5. Pour in the dry white wine and stir constantly until fully absorbed.
  6. Add warm broth one ladle at a time, stirring often. Wait until each addition is absorbed before adding more.
  7. Once the rice is cooked, stir in heavy cream (if using), grated parmesan, and the final tablespoon of butter.
  8. Gently fold in the seared beef and lobster. Let them warm through in the risotto. Finish with a sprinkle of fresh parsley, lemon zest, and extra parmesan if you like.

Notes

  • Using pre-cooked lobster can save time and still provide excellent flavor.
  • For a non-alcoholic version, you can skip the wine and use extra broth instead.
  • This risotto is best served immediately for the creamiest texture.
