Ingredients
Scale
- 1 pound large raw shrimp, peeled and deveined
- 1 ½ cups orzo pasta
- 3 cloves garlic, minced
- 1 small shallot, finely chopped
- ½ cup sun-dried tomatoes, chopped
- ¼ teaspoon crushed red pepper flakes
- 3 cups chicken broth (or seafood stock)
- ½ cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley
- Juice of ½ lemon
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté shallots for 2–3 minutes until softened.
- Stir in minced garlic and red pepper flakes; cook until fragrant.
- Add orzo and toast for 1–2 minutes until slightly golden.
- Pour in the broth and sun-dried tomatoes; bring to a simmer.
- Cook orzo for about 8–10 minutes, stirring occasionally.
- Nestle the shrimp into the simmering orzo during the last 5 minutes of cooking.
- Stir in heavy cream and Parmesan; reduce heat and simmer gently for 2–3 minutes.
- Finish with fresh parsley, a squeeze of lemon juice, and season with salt and pepper.
- Serve hot and enjoy every creamy, flavorful bite!
Notes
- For a spicier dish, increase the amount of crushed red pepper flakes.
- Feel free to substitute shrimp with chicken or vegetables for a different variation.
- Make sure to stir the orzo occasionally to prevent it from sticking to the bottom of the skillet.
