Description

A quick and easy one-pot dish combining spinach and tomatoes with pasta in a creamy sauce, perfect for dinner.


Ingredients

  • 14 ounces penne pasta
  • 4 cups chicken stock
  • 1 medium onion, chopped
  • 1 cup heavy whipping cream
  • 4 to 5 ounces fresh spinach
  • 1 cup sun-dried tomatoes in olive oil, chopped
  • 1/2 cup freshly shredded parmesan cheese
  • 1 tablespoon sun-dried tomato oil
  • 1/3 cup tomato paste
  • 1 teaspoon red chili flakes
  • 5 garlic cloves, minced
  • 1/4 cup fresh basil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Instructions

  1. Heat a pot over medium-high heat and add 1 tablespoon of sun-dried tomato oil.
  2. Add the chopped onion and cook until slightly brown.
  3. Add minced garlic and sun-dried tomatoes, cooking for 2-3 minutes.
  4. Stir in the tomato paste and cook for a couple more minutes.
  5. Slowly add chicken stock to deglaze the pan, mixing it in.
  6. Pour in the heavy whipping cream and mix well.
  7. Add black pepper, kosher salt, and red chili flakes, stirring to incorporate.
  8. Add penne pasta and stir to combine with the sauce.
  9. Reduce heat to low-medium and cook uncovered for about 10 minutes.
  10. Add fresh spinach and basil to the pot, allowing spinach to wilt down.
  11. If necessary, add a little more water or chicken stock for consistency.

Notes

  • Watch the pasta closely to avoid overcooking.
  • Add more liquid if the dish becomes too thick.
