- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup diced fresh peaches
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together all-purpose flour, baking soda, and salt. Set aside.
- In a large bowl, beat unsalted butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Incorporate the egg and vanilla extract into the creamed mixture, mixing until well combined.
- Gradually mix the dry ingredients into the wet mixture, stirring just until incorporated.
- Gently fold in the diced fresh peaches using a spatula.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing evenly.
- In a small bowl, combine ground cinnamon with 1/4 cup granulated sugar. Sprinkle the mixture over each dough mound.
- Bake for 12 to 15 minutes, or until the edges are golden brown and centers are set.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For best flavor, use ripe peaches.
