  • 1/2 cup packed brown sugar

  • 1 cup diced fresh peaches
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat unsalted butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  4. Incorporate the egg and vanilla extract into the creamed mixture, mixing until well combined.
  5. Gradually mix the dry ingredients into the wet mixture, stirring just until incorporated.
  6. Gently fold in the diced fresh peaches using a spatula.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing evenly.
  8. In a small bowl, combine ground cinnamon with 1/4 cup granulated sugar. Sprinkle the mixture over each dough mound.
  9. Bake for 12 to 15 minutes, or until the edges are golden brown and centers are set.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
