A delicious no-bake treat that combines the flavors of pecan pie in bite-sized balls.
Ingredients

- 2 cups finely chopped pecans
- 1 cup graham cracker crumbs
- 1/2 cup brown sugar (light or dark)
- 1/4 cup maple syrup (or corn syrup)
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup powdered sugar (for rolling)
Instructions
- In a large mixing bowl, combine the chopped pecans, graham cracker crumbs, brown sugar, cinnamon, and salt.
- Add the maple syrup and vanilla extract. Mix until the ingredients come together and form a sticky dough.
- Scoop out about 1 tablespoon of the mixture and roll it between your hands to form a ball. Repeat with the remaining mixture.
- Roll each ball in powdered sugar until fully coated. Place on a parchment-lined tray.
- Refrigerate the pecan pie balls for at least 30 minutes to firm up before serving.
- Serve chilled or at room temperature. Store in an airtight container in the refrigerator for up to a week or freeze for up to 3 months.
Notes
- Using light or dark brown sugar will affect the flavor slightly.
- Feel free to substitute corn syrup with maple syrup for a richer flavor.
- Rolling in powdered sugar can be adjusted to taste.
