Description
A quick and tasty treat combining pepperoni and cheese in a crispy quesadilla.
Ingredients

- 1 medium soft flour tortilla
- ¼ cup shredded mozzarella cheese
- ⅛ teaspoon Italian seasoning (and/or use pizza seasoning!)
- 4–5 pepperoni slices (or turkey pepperoni), or more depending on your preference and size of your tortilla
- Optional: a little olive oil for greasing the pan
- Pizza sauce (or marinara) for dipping
Instructions
- Optional: spray or brush a large skillet with olive oil. Place 1 medium soft tortilla in the skillet and spread shredded cheese over one half of the tortilla.
- Sprinkle about ⅛ teaspoon Italian seasoning over the cheese and place 4 pepperoni slices over the same half of the tortilla.
- Fold in half, then turn the heat on to medium low, and cook until the cheese starts to melt. Watch so the bottom does not burn – turn the heat down or cover with a lid to get the cheese melting faster.
- Carefully flip the quesadilla and cook for another minute on the other side, or until the other side is golden brown and the cheese is melted. The trick to flipping a quesadilla is to flip it keeping the fold side down, so that the fillings don’t fall out.
- Remove from heat and allow to cool a little. Serve with pizza sauce for dipping.
Notes
- Can customize with additional toppings like vegetables or different types of cheese.
- For a healthier version, use whole wheat tortillas or low-fat cheese.
- For a gluten-free option, use gluten-free tortillas.
