A quick and delicious recipe for Pesto Shrimp Mushroom Pasta that combines succulent shrimp and mushrooms with a flavorful pesto sauce.


Ingredients

  • 12 oz spaghetti or your favorite pasta
  • Salt (for pasta water)
  • 1 lb large shrimp, peeled and deveined
  • 8 oz mushrooms, sliced (button or cremini)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 cup fresh basil pesto (store-bought or homemade)
  • ¼ cup grated Parmesan cheese (plus extra for serving)
  • 2 tablespoons lemon juice (freshly squeezed)

Instructions

  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. In a large skillet over medium heat, heat the olive oil.
  3. Add minced garlic and sliced mushrooms to the skillet. Sauté for about 3-4 minutes until the mushrooms are tender.
  4. Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes if using. Cook for about 3-5 minutes until the shrimp are pink and opaque.
  5. Reduce the heat to low and stir in the cooked pasta, pesto, Parmesan cheese, and lemon juice. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  6. Toss everything together until well combined and heated through.
  7. Serve immediately, garnished with additional Parmesan cheese and fresh basil if desired.

Notes

  • For a spicier dish, increase the amount of red pepper flakes.
  • This dish can be made with any type of pasta you prefer.
  • You can use homemade pesto for an even fresher flavor.
