Description
A delicious and healthy meal consisting of grilled chicken and pineapple served over cauliflower rice, perfect for a light dinner.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup fresh pineapple slices
- 2 cups cauliflower rice
- 2 tablespoons olive oil
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons honey
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, chopped
- Salt and pepper, to taste
Instructions
- In a bowl, whisk together soy sauce, honey, minced garlic, and grated ginger.
- Add chicken breasts, toss to coat, cover, and refrigerate for at least 30 minutes.
- Preheat grill to medium-high.
- Grill chicken for 6–7 minutes per side until fully cooked (165°F internal temp).
- Grill pineapple slices for 2–3 minutes per side until caramelized.
- In a skillet, heat olive oil over medium heat.
- Add cauliflower rice, season with salt and pepper, and sauté for 5–7 minutes until tender.
- Slice grilled chicken into strips.
- Layer cauliflower rice, chicken, and pineapple in serving bowls.
- Garnish with chopped green onions and serve warm.
Notes
- For a gluten-free option, use tamari instead of soy sauce.
- Add additional veggies to the cauliflower rice for extra nutrition.
- This recipe can be easily doubled for meal prep for the week.
