Description

A delicious and healthy meal consisting of grilled chicken and pineapple served over cauliflower rice, perfect for a light dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh pineapple slices
  • 2 cups cauliflower rice
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, chopped
  • Salt and pepper, to taste

Instructions

  1. In a bowl, whisk together soy sauce, honey, minced garlic, and grated ginger.
  2. Add chicken breasts, toss to coat, cover, and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high.
  4. Grill chicken for 6–7 minutes per side until fully cooked (165°F internal temp).
  5. Grill pineapple slices for 2–3 minutes per side until caramelized.
  6. In a skillet, heat olive oil over medium heat.
  7. Add cauliflower rice, season with salt and pepper, and sauté for 5–7 minutes until tender.
  8. Slice grilled chicken into strips.
  9. Layer cauliflower rice, chicken, and pineapple in serving bowls.
  10. Garnish with chopped green onions and serve warm.

Notes

  • For a gluten-free option, use tamari instead of soy sauce.
  • Add additional veggies to the cauliflower rice for extra nutrition.
