Ingredients

- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 3/4 cup water
- 1 tsp cinnamon oil (food-grade)
- 1/2 tsp red food coloring (optional)
- Powdered sugar (for dusting, optional)
- Candy thermometer
- Candy molds or parchment-lined baking sheet
Instructions
- Line a baking sheet with parchment or prepare your molds. Measure out your cinnamon oil and food coloring. Clip the thermometer to your saucepan.
- Combine sugar, corn syrup, and water in the saucepan. Stir over medium heat until dissolved.
- Stop stirring and heat the mixture to 300°F (hard crack stage).
- Remove from heat and quickly stir in cinnamon oil and food coloring.
- Pour into molds or baking sheet. Cool completely.
- Break into pieces and dust with powdered sugar if desired.

- Be cautious when working with hot sugar syrup to avoid burns.
