Ingredients

  • 1 1/2 cups + 2 tbsps (204 g) all-purpose flour, spooned and leveled
  • 2 tbsps (10 g) Dutch process cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) salted butter, softened
  • 3/4 cup (165 g) light brown sugar
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 tbsp vanilla
  • 11 1/2 tsp red gel food coloring
  • 3/4 cup (150 g) chopped white chocolate or white chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
  2. In a small bowl, add flour, cocoa powder, baking soda, baking powder, and salt. Whisk to combine and set aside.
  3. In a large bowl, cream together softened butter, light brown sugar, and granulated sugar with an electric mixer for two minutes until light and fluffy.
  4. Add egg yolks, vanilla, and red food coloring to the mixture and mix on medium speed for two minutes, or until fluffy.
  5. Mix in the dry ingredients until combined.
  6. Add chopped white chocolate and mix just until incorporated.
  7. Scoop the dough into 18 balls and arrange them two inches apart on the prepared baking sheets.
  8. Bake the cookies for 10-12 minutes (shorter for slightly underdone centers, longer for a crispier edge).
  9. Remove from the oven and let cool for 5 minutes on the baking sheet before transferring to a cooling rack for an additional 5 minutes. Optionally, add extra white chocolate chunks on top after baking.
  10. Store leftovers in an airtight container for up to three days.
