  • 1/4 cup maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • 85 grams cream cheese
  • 42.5 grams unsalted butter
  • 125 grams powdered sugar
  • 1/4 tsp vanilla extract
  • 1/4 cup white chocolate
  • 1/4 cup sprinkles

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Sift almond flour and powdered sugar together in one bowl.
  3. In a separate bowl, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
  4. Fold in sifted dry ingredients gently until combined.
  5. Divide batter into three bowls; color one red, one blue, and leave one plain.
  6. Pipe small circles onto parchment-lined baking sheets, leaving space between them.
  7. Let macarons rest for 30 minutes before baking until they form a skin.
  8. Prepare filling by cooking raspberries with maple syrup, then mix cream cheese and butter with powdered sugar.
  9. Assemble by pairing macaron shells and filling them.
