Description
Ricotta pistachio honey bites are deliciously soft and sweet cookies with a delightful combination of ricotta cheese, crunchy pistachios, and a touch of honey.

- 1 ½ cups (190g) all-purpose flour
- ½ cup (60g) almond flour
- ½ cup (60g) shelled pistachios, finely ground
- ½ cup (120g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- ½ cup (120g) ricotta cheese
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- ½ tsp baking powder
- ¼ tsp salt
- ¼ cup (60ml) honey (for drizzling)
- Additional chopped pistachios (optional)
Instructions
- Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
- In a large bowl, cream butter and sugar until light and fluffy. Add ricotta, egg, vanilla extract, and almond extract. Mix until smooth.
- Gradually add flour, almond flour, ground pistachios, baking powder, and salt. Mix until a soft dough forms.
- Roll 1 tablespoon-sized portions of dough into balls. Place on the baking sheet, leaving space between them.
- Bake for 12-15 minutes, until edges are lightly golden. Let cool on the baking sheet for 5 minutes.
- While warm, drizzle honey over each bite. Sprinkle with extra chopped pistachios (if using).
- Transfer to a cooling rack and let cool completely. Enjoy at room temperature!

- Ensure the butter is softened for easier creaming with sugar.
- Feel free to adjust the amount of honey based on your sweetness preference.
