Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss carrots with olive oil, cumin, salt, and pepper.
  3. Spread on a baking sheet and roast for 25–30 minutes until golden and tender, flipping halfway through.
  4. In a food processor or with a hand mixer, blend ricotta, olive oil, lemon zest, salt, and pepper until smooth and creamy. Set aside.
