- 1 lb carrots, peeled and halved lengthwise
- 1 tablespoon olive oil
- 1/2 teaspoon cumin
- Salt and black pepper to taste
- 1 cup ricotta cheese
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- Salt and pepper to taste
- 1/4 cup honey
- 1/2 teaspoon red chili flakes
- 1 teaspoon apple cider vinegar
- Fresh parsley or thyme (for garnish)
- Toasted nuts or seeds (optional, for crunch)
Instructions
- Preheat oven to 425°F (220°C).
- Toss carrots with olive oil, cumin, salt, and pepper.
- Spread on a baking sheet and roast for 25–30 minutes until golden and tender, flipping halfway through.
- In a food processor or with a hand mixer, blend ricotta, olive oil, lemon zest, salt, and pepper until smooth and creamy. Set aside.
- In a small saucepan, warm honey with chili flakes over low heat for 2–3 minutes.
- Remove from heat and stir in apple cider vinegar. Let cool slightly.
- Spread whipped ricotta on a serving plate.
- Top with roasted carrots, drizzle with hot honey, and garnish with fresh herbs and optional toasted nuts or seeds for added texture.

- Adjust the amount of chili flakes in the hot honey to your spice preference.
- For a vegan option, substitute ricotta with a plant-based alternative.
