Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground beef (85% lean)
  • 1 cup cooked quinoa
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or a blend)
  • Fresh cilantro, for garnish (optional)
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds and membranes. Lightly oil a baking dish and place the hollowed peppers upright in it.
  3. In a skillet over medium heat, add a drizzle of olive oil. Once hot, add the diced onion and minced garlic; sauté until the onion is translucent, about 3-4 minutes.
  4. Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes. Drain any excess fat.
  5. Stir in the cooked quinoa, diced tomatoes, black beans, corn, cumin, chili powder, smoked paprika, salt, and pepper. Mix everything until well combined and heated through.
  6. Generously spoon the beef and quinoa mixture into each bell pepper, packing it down slightly. Top each stuffed pepper with shredded cheese.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired before serving.
