  • 1 pound ground beef or ground lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt & black pepper, to taste
  • 2 large russet potatoes, peeled and diced
  • ½ cup milk
  • 2 tablespoons butter
  • ¼ teaspoon garlic powder
  • Shredded cheddar cheese (optional)
  • Chopped fresh parsley (optional)
  • A dollop of sour cream (optional)

Instructions

  1. Heat the olive oil in a large soup pot over medium heat. Add the ground beef or lamb and cook until browned, breaking it up with a spoon. Drain excess grease if needed.
  2. Add the onion, carrots, celery, and garlic to the pot. Sauté for about 5 minutes, until the vegetables soften and become fragrant.
  3. Stir in the tomato paste, then pour in the beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Bring the soup to a boil, then reduce heat and let it simmer for 15-20 minutes, allowing the flavors to develop.
  4. While the soup simmers, boil the diced potatoes in a separate pot until fork-tender (about 10-12 minutes). Drain and mash with milk, butter, garlic powder, salt, and pepper until smooth and creamy.
  5. Stir in the frozen peas and let the soup cook for another 5 minutes.
  6. Ladle the soup into bowls and top each serving with a generous scoop of mashed potatoes. Garnish with cheese, parsley, or sour cream if desired. Serve warm with crusty bread or biscuits!
