  • 1 bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup chicken or vegetable broth
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, toss the peeled and deveined shrimp with paprika, oregano, salt, and pepper. Set aside to marinate for about 10 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 4-5 minutes. Add minced garlic and sauté for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the seasoned shrimp to the skillet. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.
  4. Pour in the chicken or vegetable broth and lemon juice, stirring to combine. Allow the mixture to simmer for another 2 minutes to meld the flavors.
  5. Serve the shrimp mixture over a bed of cooked white rice, ensuring each serving is generously topped with the sautéed vegetables and sauce.
  6. Sprinkle with freshly chopped parsley before serving.
