Shrimp Sausage Dirty Rice is a flavorful one-pot dish featuring shrimp and smoked sausage cooked together with rice and a mix of aromatic vegetables and spices.

- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced (Andouille or your choice)
- 2 cups long-grain white rice
- 4 cups chicken broth
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 stalk celery, diced
- 4 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Gather all your ingredients. Peel and devein the shrimp, rinse under cold water, and pat dry. Slice the smoked sausage into bite-sized pieces. Dice the onion, green bell pepper, and celery. Mince the garlic and set aside.
- In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for about 5-7 minutes until softened and the onion is translucent. Add the minced garlic and cook for an additional 1-2 minutes.
- Stir in the sliced sausage and cook for about 5 minutes until browned. Add the shrimp and cook for 3-4 minutes until they turn pink and opaque. Be careful not to overcook.
- Sprinkle in the Cajun seasoning, dried thyme, paprika, cayenne pepper, salt, and pepper. Stir well to coat the sausage and shrimp evenly.
- Add the rice to the pot and stir to mix with the sausage, shrimp, and vegetables. Pour in the chicken broth and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes. Avoid lifting the lid during this time.
- After 25 minutes, check the rice. If it’s tender and has absorbed most of the liquid, remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and adjust seasoning if necessary.
- Serve hot, garnished with sliced green onions and chopped parsley.
Notes
- Adjust the cayenne pepper to control the spice level.
- Letting the dish sit covered after cooking helps to enhance the flavors.
- This dish can also be made with other types of protein if desired.
