Ingredients

  • 2 grilled chicken breasts
  • 2 cups cooked white rice
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/3 cup kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce
  • Fresh parsley for garnish

Instructions

  1. Season and marinate chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper for 30 minutes.
  2. Cook white rice according to package instructions.
  3. Grill the chicken for 6–7 minutes per side, then rest and slice.
  4. Prep vegetables: halve tomatoes, slice cucumber and red onion.
  5. Assemble bowls with rice, chicken, veggies, olives, and feta.
  6. Top with tzatziki sauce and garnish with parsley before serving.
