Ingredients

  • 2 lbs chuck roast, cut into 1-inch cubes
  • 4 medium yellow potatoes, chopped (about 4 cups)
  • 3 large carrots, sliced (about 2 cups)
  • 1 large onion, diced
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp dried thyme (or 2 tsp fresh)
  • Salt & pepper to taste

Instructions

  1. Season the cubed chuck roast with salt and pepper.
  2. Sauté diced onions in a skillet until translucent.
  3. In a slow cooker, combine sautéed onions, beef cubes, potatoes, carrots, minced garlic, bay leaves, thyme, and beef broth.
  4. Cook on low for 8 hours or high for 4 hours.
  5. Check for doneness; adjust seasoning if necessary.
  6. Serve hot with crusty bread or over rice.

Notes

  • For a thicker stew, you can thicken with a cornstarch slurry at the end of the cooking time.
