Ingredients

- 2 lbs chuck roast, cut into 1-inch cubes
- 4 medium yellow potatoes, chopped (about 4 cups)
- 3 large carrots, sliced (about 2 cups)
- 1 large onion, diced
- 4 cups low-sodium beef broth
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tsp dried thyme (or 2 tsp fresh)
- Salt & pepper to taste
Instructions
- Season the cubed chuck roast with salt and pepper.
- Sauté diced onions in a skillet until translucent.
- In a slow cooker, combine sautéed onions, beef cubes, potatoes, carrots, minced garlic, bay leaves, thyme, and beef broth.
- Cook on low for 8 hours or high for 4 hours.
- Check for doneness; adjust seasoning if necessary.
- Serve hot with crusty bread or over rice.
Notes
- For a thicker stew, you can thicken with a cornstarch slurry at the end of the cooking time.
- Feel free to add other vegetables such as peas or green beans for added nutrition.
- This stew can be frozen for leftovers; just reheat before serving.
