  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice, rinsed
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the wild rice, onion, carrots, celery, and garlic on top of the chicken.
  3. Pour in the chicken broth and add the thyme, rosemary, and bay leaf. Season with salt and pepper.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the soup.
  6. Stir in the heavy cream and let it cook for an additional 15-20 minutes on low to heat through.
  7. Remove the bay leaf before serving. Garnish with fresh parsley and enjoy!
