Indulge in these delicious S’mores Pancakes that combine the flavors of traditional s’mores into a fluffy pancake treat.

- 1 cup all-purpose flour
- 2 tablespoons cocoa powder
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter (plus more for the pan)
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
- 1/2 cup mini marshmallows
- 1/4 cup chocolate syrup or melted chocolate
- 2 graham crackers, crushed
- Whipped cream (optional)
- Toasted marshmallows (optional but highly recommended)
Instructions
- In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, melted butter, and vanilla.
- Pour the wet ingredients into the dry and stir until just combined. Fold in chocolate chips if using.
- Heat a nonstick skillet or griddle over medium heat and add a little butter.
- Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until both sides are set and fluffy. Repeat with remaining batter.
- Stack pancakes on a plate and layer with mini marshmallows between each one if desired (they’ll melt slightly—yum!).
- Drizzle chocolate syrup over the stack, sprinkle with crushed graham crackers, and top with extra marshmallows, whipped cream, or even a toasted marshmallow on top.
Notes
- For an extra gooey experience, use more mini marshmallows.
- Ensure that the skillet is adequately heated before adding the batter to prevent sticking.
- For a healthier option, substitute half the all-purpose flour with whole wheat flour.
