- 1 lb fresh jumbo shrimp, peeled and deveined
- 8 soft corn or flour tortillas
- 2 tablespoons olive oil
- 2 tablespoons taco seasoning
- 1 teaspoon cayenne pepper, adjust to taste
- 1 large ripe mango, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper, to taste
- Optional toppings: sliced avocado, sour cream, queso fresco
Instructions
- Prepare the mango salsa: Dice the mango, finely chop the red onion and cilantro. Combine in a bowl with lime juice, salt, and pepper. Refrigerate while preparing the shrimp.
- Marinate the shrimp: Mix olive oil, taco seasoning, and cayenne pepper in a bowl. Add shrimp and toss to coat. Let marinate in the refrigerator for 15-30 minutes.
- Cook the shrimp: Heat a skillet or grill pan over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and slightly charred.
- Warm the tortillas: Heat in a dry skillet or microwave wrapped in damp paper towels.
- Assemble the tacos: Place shrimp on each tortilla. Top with mango salsa and optional toppings. Serve immediately.
Notes
- Adjust the cayenne pepper to control the spiciness.
- Fresh mango is best for flavor, but canned mango can be used in a pinch.
- Leftover shrimp can be stored in the refrigerator for up to 2 days.
