Description

A delicious and flavorful Spicy Southwest Chicken Wrap that combines marinated chicken, fresh veggies, and a creamy southwestern sauce for a fantastic meal.


Ingredients

  • 0.75 lb chicken breasts, boneless and skinless
  • 1/4 cup lime juice (about one lime)
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt (more as needed)
  • 3 tbsp olive oil
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • 1 jalapeño
  • 1/2 red onion, sliced
  • 3 garlic cloves, minced
  • 1 tsp olive oil to sauté the veggies
  • 3/4 cup thawed or fresh corn kernels
  • 1 cup black beans, drained and rinsed
  • 1/4 cup cotija cheese
  • 1/3 cup sour cream
  • 1 1/2 Tbsp honey
  • 1/21 Tbsp chipotle peppers in adobo
  • 1 Tbsp lime juice
  • 3 Tbsp fresh cilantro, chopped
  • 12 Tbsp water (to thin the crema a bit)
  • 1/4 tsp salt

Instructions

  1. Marinate the Chicken: Dice chicken, marinate with lime juice, seasonings, and chipotle pepper. Let sit for 15 minutes to 24 hours.
  2. Prepare Ingredients: Cook rice, make sauce, slice veggies, and mince garlic.
  3. Cook Chicken: Sauté marinated chicken until cooked through, set aside.
  4. Sauté Veggies: In the same skillet, cook peppers, onions, and garlic, then add chicken back in.
  5. Assemble Wraps: Fill tortillas with rice, chicken, veggies, beans, corn, cheese, and sauce. Wrap tightly and enjoy!

Notes

  • Using boneless, skinless chicken breasts makes for easier preparation.
  • Adjust the amount of chipotle in adobo to taste for desired spiciness.
  • Sour cream can be substituted with Greek yogurt for a healthier option.
