Description

A refreshing and vibrant Spinach Blueberry Salad that combines the flavors of fresh blueberries, creamy avocado, and crunchy walnuts, dressed in a light balsamic vinaigrette.

Ingredients

Scale
  • 1 medium-large Avocado diced
  • 4 cups Baby spinach
  • 2 cups Blueberries fresh
  • 1/4 cup fresh Mint chopped
  • 1 cup Walnuts raw, roughly chopped
  • 1/2 cup Goat cheese crumbled
  • 1/4 cup Olive oil
  • 2 tbsp Balsamic vinegar
  • 1 tsp Honey
  • Juice of 1/2 Lemon
  • 1 tsp Garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the baby spinach, blueberries, and chopped mint.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, lemon juice, and garlic powder. Season with salt and pepper to taste.
  3. Add the diced avocado and crumbled goat cheese to the spinach mixture.
  4. Pour the dressing over the salad and toss gently to combine. Be careful not to over-toss, as this can bruise the spinach.
  5. Sprinkle the chopped walnuts over the salad.
  6. Serve immediately and enjoy!

Notes

  • For vegan options, substitute goat cheese with a vegan cheese alternative.
  • Feel free to add other toppings like sliced strawberries or quinoa for extra texture and flavor.
