A refreshing and vibrant Spinach Blueberry Salad that combines the flavors of fresh blueberries, creamy avocado, and crunchy walnuts, dressed in a light balsamic vinaigrette.

- 1 medium-large Avocado diced
- 4 cups Baby spinach
- 2 cups Blueberries fresh
- 1/4 cup fresh Mint chopped
- 1 cup Walnuts raw, roughly chopped
- 1/2 cup Goat cheese crumbled
- 1/4 cup Olive oil
- 2 tbsp Balsamic vinegar
- 1 tsp Honey
- Juice of 1/2 Lemon
- 1 tsp Garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the baby spinach, blueberries, and chopped mint.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, lemon juice, and garlic powder. Season with salt and pepper to taste.
- Add the diced avocado and crumbled goat cheese to the spinach mixture.
- Pour the dressing over the salad and toss gently to combine. Be careful not to over-toss, as this can bruise the spinach.
- Sprinkle the chopped walnuts over the salad.
- Serve immediately and enjoy!
