- 16 large mushrooms, stems removed
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add chopped spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, combine cream cheese, sour cream, Parmesan cheese, mozzarella cheese, onion powder, salt, and black pepper. Stir in the cooked spinach mixture until well combined.
- Stuff each mushroom cap generously with the spinach dip mixture and place them on a baking sheet.
- Bake for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add more cheese for extra creaminess.
